pretzel pizza

November 8, 2011

you heard right.
jeremy and i came up with this.
it’s one of my new favorite things.

make a batch of soft pretzel dough. (1 t/package yeast dissolved in 1 1/2c water with 1 T sugar. add 3 3/4 to 4 cups all-purpose flour & knead 8ish minutes.)

smooth it into a pizza crust.

top with any sauce or toppings – jeremy made a tomato cream sauce with summer squash, roasted garlic, and fried onions. we topped it with swiss cheese.

egg wash the crust and sprinkle with coarse salt.

edit 2019: tried this again. it’s fine, but too dense for pizza crust. definitely 100% prefer the texture of new york style pizza crust.

  1. and a few fried mushrooms, too. this was so good.

  2. as I commented elsewhere, I made this tonight and it was awesome. Ran out of flour so subbed some milled flax and falafel mix. It was a big hit with the Dan man.

    • it makes me so happy to hear other people are trying (and enjoying!) these recipes. it makes me think the social element of the internet can be used for something more than narcissism and reinforcement of bad habits. sharing knowledge and useful information is the best use i can think of!

hi to you, dan, and the baby too!
